This is where the "magic" happens. For two to three days, the soybeans undergo a natural transformation. It is a delicate balance; the temperature must be just right, or the batch is lost. You can tell it’s working by the distinct, pungent aroma that fills the air—a smell that every Limbu household knows as the scent of home.
The Sun-Drying Ritual Once the fermentation is perfect, we spread the sticky beans out on bamboo mats (nanglo) under the Himalayan sun. Drying is a critical step.
